Perfect for strawberry cheerleaders seeking an afternoon pick-me-up with a bit of a zing, this fast and easy smoothie will hit a thousand spots (no, really, it's inevitable I'll miss my mouth and dump half of it down me). What's even better is there are only four ingredients! You can throw an apple in there too if you've got a liquidiser strong enough to pulp it.

It feels like a bit of a cop out posting a recipe so basic, but this easy smoothie is one of my absolute favourite things about summer and I think it's worth sharing. By the time Autumn comes around I'll have nearly an entire freezer drawer dedicated to frozen strawberries from the summer harvest, purely so I can continue to enjoy this drink as far into the cooler days as possible.

There's no sherbet in the smoothie recipe, but the flavour and mouthfeel (is there any food descriptor more annoying than that word?) really reminds me of that weird sans-carbonation fizzy sensation (flavour explosion? Taste sensation? Why do all of these words sound like they've been invented by an out of touch marketing team?)

Incidentally, sherbet from the UK isn't the same as sherbet in the US. Here it's a fizzy powdery sweet (or drink), whereas in the states it's a frozen treat (like sorbet but with dairy).

Strawberry Ginger Fizzy Sherbet Smoothie

Makes about two cups (480-500ml)
  • Directions/Method
    1. If you've got a high speed super powered blender like a Vitamix or Blendtec, you can blend everything together all at once for about 30 seconds.
    2. Many liquidisers don't handle frozen products very well, so you might try slicing the strawberries up before freezing them to use in smoothies. Alternatively use fresh, unfrozen fruit and refrigerate the end product to cool (it might not be as thick but it'll still taste good).
